Small Batch CBD-infused sugar cookies
Sugar cookies, simple and easy, yet so satisfying. With an added boost of health benefits provided by CBD oil these cookies can basically be considered a health food. 😉 Enjoy these CBD-infused sugar cookies with your morning coffee, some relaxing tea, or a delicious cup of hot cocoa. Perfectly portioned. One batch makes about six normal-sized cookies or about 12 bite-sized cookies
Ingredients:
4 tablespoons butter, softened at room temperature
1/3 cup granulated sugar
1 large egg yolk at room temperature, white reserved for another use
1/2 teaspoon vanilla extract
1 tsp full-spectrum CBD oil *you can adjust this amount to less or more, recommended to start with a lower dosage of CBD and slowly working your way up.
1/2 cup + 2 tablespoons all-purpose flour
1/4 teaspoon baking soda
1/8 teaspoon fine salt
Directions:
1. Preheat the oven to 350, line a small baking sheet with parchment paper (or use a silicone mat).
2. Mix flour, baking soda and salt in a small bowl
3. In a separate larger bowl beat together softened butter and sugar until mixture becomes pale, light and fluffy.
4. Add in your CBD tincture, vanilla extract and egg yolk, beat until mixture is fully incorporated (about 45 seconds.)
5. Next, sift the dry mixture evenly over the dough, and stir just to combine.
6. Press the dough flat and evenly in the bowl, and then divide it in half by eye. You should get 3 cookies from each half.
7. Roll each dough ball in your hands, roll lightly extra granulated sugar, and then space evenly on the prepared baking sheet.
8. Bake for 10-12 minutes, until they spread and appear dry on top. Bake an extra 2-3 minutes if you like your cookies crispy.
9. Let the cookies rest on the baking sheet for 2 minutes before moving them to a wire rack to cool completely.
Bring to room temperature before serving.
